Santa Fe Restaurants
For decades, Santa Fe has had a strong influence on culture, art, and architecture in America, but it’s also become a culinary hot spot, a destination for foodies worldwide. The city’s unique blend of traditions—Native American, Spanish, Mexican, and even cowboy—lends the local cuisine a truly distinctive flair. Each of the many cultures that have called Santa Fe home has contributed to the flavor of its cuisine.
Dining out is an essential part of life in Santa Fe. Locals boast that the city, with more than 200 restaurants to choose from, has more dining establishments per capita than any other city in America. Some menu items have familiar names—enchiladas, tacos, burritos, tamales—although these Mexican staples are given a New Mexican touch by the addition of red or green chile sauce. Hearty and satisfying northern New Mexican cuisine is widely available, but other culinary traditions—Italian, French, Asian, vegetarian, American—are represented as well. Santa Fe has something to satisfy every appetite.
A Note on Chile
New Mexicans like their food spicy. The official question of New Mexico is “red or green?”. Commonly heard at restaurants, the question refers to which kind of chile sauce a diner wants served with (or more commonly on) his or her meal. Red chile is made from ground dried red chile pods and has a rich, earthy flavor and a sweet punch. Green chile is made from fresh green chiles that have been roasted, peeled, and chopped and is fresher, fruitier tasting and slightly more acidic. Diners who want both ask for “Christmas.” If you can’t take the heat, dairy products will help soothe your tongue.
